http://www.exoticmeatsandmore.com/ seems to only do mail order now, so it may be your best bet. I'd ask around closer to you though (you're in Eastern WA, or am I remembering wrong) as I was surprised at how many options I seem to have. I'm also going to be checking the local asian stores as well, as I've been told by several people that they often carry rabbit as well.

erm... Southern Oregon, actually. I checked at our local stores -- even the organic ones -- and the only thing I came up with for hare was to have it mailed from Israel.

So I was a bit aghast.

One of the discussions on the Apicius list was how to replicate the taste of dormouse -- and rabbit was suggested as similar -- and I can now try one of the dormouse subtleties....So thank you for this!

I'm a dork, I'm not sure why I was thinking you were in a different part of the kingdom- sorry. :(

I just found the best price so far at Tacoma Boys/ H&L produce by my house- whole frozen rabbit for 2.99lb!!!! I'm not sure if they'll ship, but if you're ever up in the area with a cooler it might be worth it. If you're possibly coming to the next Culinary Symposium I could get one for you and bring it to the event. :)

Definately checking there first as they're the most convinient, and often the most cost effective too. Last time I was just looking for skinless boneless chicken breast they not only had the best price (1.99/lb) they're meats and produce looked much better than the local safeway and alberstsons.

Yeah, I'd go to an Asian market for eel and a Mexican one for rabbit. That's what my butchers down here have anyway.
