Since I have at least a moment today I'll give myself a list here of what's done and what to purchase, where (for the stuff that shouldn't be bought too far out). Also notes to myself on what to bring, and what's been promised to be brought by others.
As this will be for 150 people I'm still tweaking the numbers to figure just how much I need of what. We've got pleanty of pearl barley now. I just have to figure out if I should still figure on full servings of each dish for all 150, or to divide it into 3rds, or try to figure out how many people will want each. The barley is pretty darn cheap and will fill a lot of bellies. The big cost items are the meats, cheeses and ravioli's.
Beef - Will be brought by Arnora as unfortunately I don't have the freezer space.
I did look up prices though. They have a "special trim" at cash & carry for 1.94 a lb. Not the best cut ever, but a great price.
Barley - 25 lb bag for 6.29
Carrots - 4 ib bag for 3.06
Onion - ? not sure if it was requested I leave these out. I could mince them fine in my food processor.
Ravioli - 2.5 ib cheese 6.82 pr bag
Cheese - "pizza mix" 5 lb 8.48, or Mozerella 5 lb 8.19
Bread / rolls - will see if I can catch the Gai's outlet open, or see if I can get someone who doesn't work during the day to run for me.
Butter - Will buy from the grocery outlet, cheapest price.
Apple juice - 1 gallon for 1/09 premixed, for hot cider.
Spices, have at home, may need more cinnamon sticks.
Bags of salad. I'm thinking Itialian mix, I would have considered spinish but after last week I'm not so sure on that.
balsamic vinagrette (homemade)
Ranch?
Other alternate?
Bring:
Hot pads
serving utencils
pot for cider.
Faileen has offered a 5 gallon pot, and a turkey to make a second batch of barley soup for those who can't have beef. Arnora has said she will bring several other big pots, as well as baking dishes for the ravioli. So, I think we're set there. I'd rather have too many pots and pans than need something and have it not show up.
All in all, I think it's on the right track. I'm a little nervous, but only because I've never cooked for this large a number before.
