Some of these are just to give me a range of cooking instructions. I think my game hens are much smaller than the ones they're alluding to here. Mine are about 14 oz each, bone in so I'm guesstimating them to be about the right portion size whole. I'm currently leaning towards the one on the bottom. The crock pot recipe is only for reference. I'll be cooking 30-35 of the little buggers so doing them a few at a time at 8hrs a pop just won't work for me.
Basic Instructions
Here are some ways to quickly enchance Cornish game hens (or roast chicken). Start with four hens weighing 1 to 1-1/4 pounds each and a quick fix of your choice below. Roast the hens at 375 degrees F. for about 1 hour, or until the juices run clear when a thigh is pierced with a knife and a meat thermometer registers 170 degrees F.
Citrus Glaze
Mix 1/4 cup thawed, frozen orange juice concentrate, 2 tablespoons Dijon mustard, and 2 tablespoons honey until well blended. Brush the glaze over the hens during the last 15 to 20 minutes of roasting.
Asian Accent
Mix 2 tablespoons soy sauce, 2 tablespoons chicken broth, and 1 teaspoon sesame oil. Brush the mixture over the hens and pour a little into the cavities before roasting as directed above.
Apricot Glaze
In a small bowl, mix 1/2 cup apricot jam, 2 tablespoons soy sauce, 2 tablespoons Dijon mustard, and 2 tablespoons honey. Roast hens as directed. Brush the apricot glaze over the hens during the last 15 to 20 minutes of roasting.
Mexican Spiced
Rub the outside of the hens with packaged taco seasoning and lightly spray with non-stick vegetable oil cooking spray. Roast as directed.
Lemon-Basil
Rub the outside of the hens with a cut lemon and brush with melted butter. Place one lemon half and sprig of fresh basil into each cavity. Roast as directed.
Mustard-Herb
Coat the outside of each hen with about 1 tablespoon of Dijon mustard. Sprinkle with a mixture of dried tarragon, basil and thyme. Roast as directed. Deglaze the pan with 3/4 cup white wine and serve with the pan juices.
Garlic-Herb
Mix 2 tablespoons minced fresh garlic, 2 teaspoons finely chopped fresh thyme, 2 teaspoons finely chopped fresh rosemary, and 2 teaspoons finely chopped sage. Loosen the breast skin of each hen and rub one quarter of the mixture under the skin of each bird. Roast as directed.
 
Pomegranate Honey Roasted Game Hens Recipe
Ingredients
1 cup fresh pomegranate juice (see note below)
1/2 cup honey plus 3 tablespoons
1/2 teaspoon ground coriander
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon cayenne pepper
6 cloves garlic, smashed
3 game hens, split in half
Salt and pepper
Pomegranate seeds for garnish
Chopped, roasted pistachio nuts for garnish
Instructions
To remove the seeds, cut the crown end off a pomegranate, removing with it some of the white pith. Take care not to pierce the seeds within. Lightly score the skin in quarters, from the stem to crown end. Firmly yet gently break the sections apart, following the score lines. Bend back the skin and gently scoop the seed clusters into a bowl; remove any pith.
(Note: For 1 cup of juice, put 1-1/2 to 2 cups seeds in a blender; blend until liquified. Pour mixture through a cheesecloth-lined strainer or sieve.) 
Mix pomegranate juice, 1/2 cup honey, and next 5 ingredients; pour over hens. Marinate, covered, overnight or at least 8 hours in the refrigerator, turning occasionally. Drain hens, reserving marinade. Simmer marinade, covered for 10 minutes; reserve. Season hens with salt and pepper. Bake at 450 degrees F, basting frequently with reserved marinade, until hens are just firm to the touch, about 25 minutes. Remove from oven; let rest covered with a tea towel for 5 minutes. Brush each half with 1/2 tablespoon honey. Garnish with pomegranate seeds and chopped pistachios. Yield: 6 servings
Crock Pot Cornish Game Hens
Ingredients
4 Cornish game hens
8 ounces stuffing mix
1 cup chicken stock
1 large orange, cut up
1/4 cup fresh orange juice
2 tablespoons honey
1-1/2 teaspoons vegetable oil
1 tablespoon fresh lemon juice
1/4 teaspoon grated orange peel
Instructions
Rinse hens; sprinkle inside and out with salt and pepper. Prepare stuffing mix according to package directions. Spoon into hens and truss. Place neck ends down in crock pot. Combine remaining ingredients. Baste hens with some of the sauce and pour remainder in pot. Cover and cook on low for 5 to 7 hours. Baste hens once or twice during cooking. Spoon sauce over hens at serving time.
Cornish Hens with fig and orange stuffing
Pronounced: poo sah(n) / fahr see / oh / fee guh
INGREDIENTS:
  • 3 Cornish hens, rinsed and patted dry
  • 9 thyme sprigs (about 4-in. long)
  • olive oil
  • For the stuffing:
  • 2 teaspoons olive oil
  • 1 small onion, sliced
  • 1` garlic clove, pressed
  • 1 Tablespoon brandy
  • 2 teaspoons grated orange rind
  • 1/3 cup orange juice
  • 1/2 cup chopped dried figs
  • 4 Tablespoons butter
  • 1 Tablespoon brown sugar
  • 7 sliced white bread, torn into small pieces
  • 2 Tablespoons choppled Italian (flat-leaf) parsley
  • sea salt and freshly ground pepper
PREPARATION:
Make the stuffing:
1. In a non-stick skillet, heat the oil over med-high heat. Add the onion and garlic and cook about 5 minutes or until soft and golden.
2. Add the brandy, orange rind, juice, figs, butter and sugar and cook, stirring occasionally, an additional 5 minutes.
3. Remove from heat, pour into a bowl and allow to cool for 10 minutes.
4. After 10 minutes, using your hands, mix in the bread, parsley, salt and pepper.
Preheat oven to 400F.
5. Stuff the cavities of the Cornish hens with the stuffing. Tie the legs together.
6. Tuck 3 sprigs of thyme behind the tied legs. Rub all over with the olive oil and sprinkle with salt and pepper.
7. Place on a rack in a baking dish and roast for 40 minutes or until golden and cooked through.

I just noticed that I have tons of blackberries this year. The last several summers have been disappointing due to the drought and lack of natural water. This year, I actually have some serious berries.

My mom always cooked them with white wine, lots of tarragon & garlic and a bit of lemon juice. They really shouldn't take more than an hour to bake.

I'm going to be swamped most of September, (coming to a head the weekend of the 22-23 when I'm the organizer for a big event), but after that would be great.

I wouldn't mind feeding your guys either, but I'm sure I could stand being fed and playing with your adorable daughter. :) Such a cutie pie.

I've never had game hen before (confession time). This sounds good! I'm usually squeamish about meat and bones (not a very dedicated meat eater, I'm afraid) but I'll get over it to try these :)
